In search of ciauscolo….

So after having searched high and low for one of the 1000 things to Eat Before you Die items, I was able to find ciauscolo in Edmonton at the Italian Market.  While described as salami, it has much more of a pate texture and here you see it perched it on top of a piece of carrot/Sunflower bread.  It is a very creamy, flavorful salami and worth the search to find.  Lilly, Tara’s dog, seemed to think so, too.
