Lamington Cake

Lamington is an Australian yellow cake, dipped in chocolate and rolled in coconut. Mimi has it on her list and it appears to be one of the most popular Australian treats. I am posting this on Australian Reconciliation Day which is a day designed to celebrate Aboriginal Australian culture and promotes cultural exchange and understanding. Now, this being said, Lamington has zero to do with Aboriginal Culture but this seemed like a great day to post about an Australian food….
