Nothing says Super Bowl Like German Onion Tart or Mashed Potatoes and Cabbage…
So am a bit behind in my posting but for Super Bowl got together with friends who were so kind as to grill meat. I had been wanting to make a Irish dish called Colcannon (one of the 1000 things) which is mashed potatoes with cabbage, green onions and bacon. There are many recipes out there (I used one from a Taste of Home) and they each talk about their favorite potatoes-I choose red and Yukon gold, peeling the Yukon but leaving the red skins on for color. It appears bacon or ham or no meat at all are the meat choices-I went with bacon. This can be cabbage or kale and I choose kale. Final choice is should the butter be browned or not browned and I went for browned butter for flavor.
Not wanting to feel like I didn’t get the idea of snack foods for Super Bowl, I also decided to make a German/French version of Pizza called Tarte Flambee or Alsatian Onion Tart using an All Recipe version. This is something I had eaten when living in Germany-that was my part of the country with the town of Freiburg situated right up against Alsace-Lorraine. I used pre-packaged Trader Joe Pizza dough and only sour cream for the cheese portion. I pre-cooked my bacon and onions. Did this turn out? Far too puffy but still delicious.
