How many things go with Champagne or Prosecco? It appears quite a few….
I am behind in writing these posts but a couple of weeks ago we had a last big party prior to social distancing to celebrate all of our birthdays but most particularly Elena’s whose birthday is coming up in a couple of weeks and Ivan’s 60th birthday which is in April. I found an Epicurius article that had champagne/prosecco pairs so I followed most of the recipes and we had a six course dinner for 20. I served it as courses and all served cocktail style. In order we had:
1. French and Italian cheese including a baked ricootta with dried persimmons as well as Pistachio crusted scallops with puy lentils, 2. Crab and mango ceviche served with popcorn, 3. Mesclun salad with a homemade mustard-shallot based dressing; 4. Sweet Potato, Corn and Shrimp Chowder, 5. Clam, fennel and leeks with an interesting ingredient called neonata (spicy Italian Fish paste) with homemade pasta and 6. Raspberry-Rhubarb crostata with homemade cinnamon ice cream. None of the recipes are mine so I don’t think I can post them, but I am putting links to everything here.
The end result worked out well and I think we can say that we consumed quite a bit of champagne during the evening… I am going to have to remember this as we all stay in for the next months…
