Koldskal & Kammerjunker (Danish Cold Buttermilk Soup with Oat Biscuits)

So this is one of the 1000 things that really sound horrible BUT is really delicious.  The Danes eat a cold buttermilk soup (Koldskal)  that they sprinkle with berries and a type of Danish biscuit/cookie made with oats, lemon and cardamon (Kammerjunker).  I used the recipes from the website Danish Food and Living.  It has been so very hot here and I can say, this cold soup served for lunch is really refreshing.
