Huachinango a la Veracruana (Red Snapper in a tomato sauce)

Red Snapper Taco

So Wednesday was our weekly “Taco Tuesday” where we socially distance and eat Tacos with our neighbors. Interestingly enough, we have Taco Tuesday quite often on a Wednesday. In order to make something different, we tried Huachinango a la Veracruana.  This is a spicy red snapper recipe-tomato based filled with pickled jalapenos, capers and green olives.  I used the recipe from Mexico in My Kitchen. The picture from their website looks a whole lot better than mine but mine was delicious. This is normally served as a stew and corn tortillas, but we ate them like tacos.  It can be made with a whole red snapper or with fillets which I prefer.  Here is another 1000 thing recipe that is a winner….
