Huachinango a la Veracruana (Red Snapper in a tomato sauce)
So Wednesday was our weekly “Taco Tuesday” where we socially distance and eat Tacos with our neighbors. Interestingly enough, we have Taco Tuesday quite often on a Wednesday. In order to make something different, we tried Huachinango a la Veracruana. This is a spicy red snapper recipe-tomato based filled with pickled jalapenos, capers and green olives. I used the recipe from Mexico in My Kitchen. The picture from their website looks a whole lot better than mine but mine was delicious. This is normally served as a stew and corn tortillas, but we ate them like tacos. It can be made with a whole red snapper or with fillets which I prefer.
