Humus and Eesh Baladi (Egyptian Flatbread)

Today I baked one of the 1000 Things called Eesh Baladi which is an Egyptian bread similar to pita but made with whole wheat flour.  The whole wheat creates a denser, nuttier tasking bread. The surface is sprinkled with wheat bran or caraway seeds to create additional texture.  It is a perfect bread to scoop up humus so I made Randa’s Humus recipe.   Humus is simple to make and there are many recipes but everything Randa makes is magical so I stand by her recipe!  The key is really good olive oil and not scrimping on the garlic or the lemon. When I pulled out the recipe she copied down for me, she wrote a note “Well, good luck with all of this-I hope you will be a chef in Arabic food”.    No one makes anything as well as Randa, but this comes a close second.

Randa's Humus

  • Servings: 1.5 cup finished humus

Ingredients:

1 15-oz can of Garbanzo beans

3 cloves of garlic

Juice of one lemon

¼ teaspoon salt

3 tablespoons of olive oil

5 tablespoons of tahini

¼ cup water

Preparation:

Blend the garlic together in a blender.  Add the remaining ingredients and blend until smooth.  If the mixture remains dry, please add additional water.  Scoop onto a flat plate and drizzle with olive oil.
