Dansk Flaeskeaeggekage (Danish Baked Omlete)-Another 1000 Thing

This week I tried another 1000 thing-a Danish Baked Omelet. I knew going in that this would not be my favorite-no cheese, no hot sauce, lack of veggies except for a few tomato slices but it is, after all, a 1000 Thing. I have come to learn that I can tell even before making something if it is include in the book because it is amazing or if it is included because it is traditional. I knew this one would be traditional. The omelet is baked in a pan that first has crisped bacon so the bacon fat, the strips of cooked bacon and the additional of cream should perk this up. It really didn’t. I think if I made it again, I would add sauteed leeks and feta cheese and some peppers. Of course, if I did that, it would be a frittata and not a dansk flaekeaeggekage at all. The best part is that Shari can “the fluffy” came to give it a try. Fluffy didn’t get any of the omelet but she liked the bread and the sausages I served along side it. Come to think of it, so did I….
