New Zealand Green Lipped Mussels (another 1000 thing)

I tracked down New Zealand Green Lipped Mussels the other day and made one very amazing appetizer.  I had heard about these mussels before-they surface in all kinds of articles on health beginning in the 1970s. Specifically, Māori people observed they lowered the incident rate of arthritis. They have since been identified as an anti-inflammatory omega-3 fatty acid rich food.  They can be eaten like any other mussel, cooked in wine and garlic but I tried a new way and stuffed them with panko, garlic, parsley and lemon zest.  Broiled and served with a spicy mayo, they were delicious.
